首聘教授


个人简介:

先后于2012年,2016年毕业于中国科学院过程工程研究所、美国罗格斯大学。2017年以首聘教授方式引进到华南农业大学食品学院。致力于食品活性成分的功能递送系统构建及评价研究:在明确蛋白质、多糖、油脂等生物大分子的自组装及其多尺度结构互作机制的基础上,构建食品活性成分的可食性递送体系,旨在通过可控性构建活性成分的负载及递送体系来改善食品活性成分的存储稳定性、可控及靶向释放性、体内生物利用度并提高农副产品附加值。
    近五年在相关领域发表SCI论文20篇,其中第一作者SCI论文12篇,第一作者JCR一区TOP SCI论文11篇。已连续五年受邀在知名国际会议(如美国化学会国际会议ACS、美国国际食品科技大会IFT、国际保健品及功能食品年会ICNFF、国际食品及保健品大会WCFN)上做大会报告10余次。近五年来在植物蛋白、油脂递送系统的构建、结构表征、功能性评价以及高值化应用领域开展了多项创新性工作,研究成果在本学科领域具有较强创新性及重要性,获得业界广泛认可。

• 功能输送体系应用于智能食品包装材料以及天然产物与功能成分的包埋与输送
• 新型功能输送系统的自组装机制研究;
• 界面处胶体粒子对乳液体系中抗氧化物的分配及调控机理;
• 活性成分与载药体系的互作机制以及控释机理;
• 新型口服递送系统在体内消化吸收及代谢机制

• 温和酸性或碱性热处理条件下大豆蛋白7S 和11S的多级结构响应

• 钴铁磁性纳米小球的制备、表面修饰及其在油水界面的组装行为
• 超声提取冬虫夏草菌丝体多糖及其理化性质研究
• 雪莲多糖、芦笋多糖纯化及抗氧化、抗癌活性研究
• 机械损伤法促进牛角瓜毛状根中强心甾的产生方法 
• 高温发酵纤维素获得生物质酒精的全生命周期评价 
• 高效液相色谱法测定红曲中桔霉素含量
